California Roll

Americans wary of trying sushi because of the raw fish rejoiced in the early 1970s when a California chef created this delectable roll with imitation crab, avocado, and cucumber. The considerate chef also made the roll inside-out since Americans were more familiar with rice than nori, or seaweed. The California roll has become a countrywide hit and inspired other American-style sushi rolls, including the Philadelphia and spider rolls.
