Safety
Keep a spray bottle close by in case of a flare-up. If you're using a charcoal grill, it's a good idea to stack the coals on one side of the grill so you have a cooler side to move the plank to -- in case your fire gets too hot.

Shaping Your Burgers
Once you've formed the patties, make a small dent in the center by pressing down with your thumb and forefinger. The dimple will pop out while cooking to form a perfectly flat top.

Rubs
Try using a flavor rub on your meat. We love Fire & Flavor's Asian rub. Founder Genevieve Knox recommends putting it on chicken and serving it with a peanut dipping sauce.
