1. Use good ingredients. Whole milk, butter, real vanilla, or lemons will all make a big difference in taste. When it comes to baking, you get out what you put in, so try to keep everything pure and non-artificial.
2. Keep your wet and dry ingredients separate. Most recipes tell you to do this, but it can be tempting to throw everything in one bowl (hey, it’s fewer dishes to wash). This is one step that’s worth the extra effort.
3. Really mix your batters. Taking the time to aerate your cake batter by mixing it thoroughly for a few minutes can make the difference between a so-so cake and a fantastic one.
