How to Freeze Fruit

Freezability Factor Most fruits can be frozen; some require many complicated steps involving sugar, syrup and ascorbic acid. Beginners should stick to berries, grapes and bananas.

What to Avoid Watermelon, pears and avocados don’t love the cold. Also, freezing fruit before it ripens will leave you disap- pointed come thaw time since the freezer stops the maturing process.

How to Small, whole fruit like grapes and berries are by far the easiest to freeze. Just spread out on a tray (to avoid clump- ing), freeze and then transfer to a plastic bag or storage container. For bananas, you can mash them up and store in a container (great for smoothies) or freeze a whole banana in plastic wrap.

Ready to Use? On a hot day, eat grapes or strawberries in their frozen state or make mixed fruit smoothies. To add to baked goods or jams, thaw them out by placing them in the refrigerator overnight.
