When it comes to maximizing taste with very little effort -- not mention bang for your buck! -- pasta is a tried and true favorite. We love this one from Nestie oct11bride03 because of its ease of preparation, vibrant colors, unique blend of cheeses, and drool factor (that is, how much we salivate when viewing it on our computer screen).

Sarah’s Spaghetti With Marinara and Ricotta
1 lb. spaghetti
2 Tbl. olive oil
1 medium onion, finely chopped
2 garlic cloves, minced
Salt and pepper, to taste
1/4 tsp. red pepper flakes
1/2 tsp. dried oregano
1 (28-oz.) can whole, peeled tomatoes
1/2 cup ricotta cheese
Grated Pecorino cheese, to taste
Minced parsley for garnish
Boil water and prepare spaghetti noodles according to package instructions. Heat oil in a deep saucepan or skillet over medium heat and then add onion, garlic, salt, pepper, red pepper flakes, and oregano. Cook until onion is soft, about 5 minutes. Meanwhile, process whole tomatoes in a food processor using quick pulses, until they're smooth. Add tomato mixture to pan with spices. Let simmer for 10 minutes. Adjust seasonings to taste and then simmer another 15 minutes to thicken. Toss pasta with sauce. After plating, add a dollop of ricotta cheese on top of each serving. Sprinkle with grated Pecorino and parsley.
