Pocketknife Cole Slaw

Try Zac Brown's southern recipe for one of his favorite comfort foods.

A former restaurateur and chef, Zac Brown is best known as the lead singer of the country group the Zac Brown Band, who was honored as Grammys’ Best New Artist of 2010. Bet you didn't know about his Southern Ground Cookbook -- a collection of 27 of his favorite comfort-food recipes, printed on individual index cards. Brown chose this summer-friendly coleslaw recipe (yep, it's in the book) to share with TheNest.com readers. Enjoy!

Makes: 12 servings
Time: 45 minutes

Slaw Ingredients:
1 head of cabbage
1 large green bell pepper
8 green onions
2 ripe tomatoes

Slaw Dressing Ingredients:
2 cups Duke’s or Sauer’s mayo
2 Tbl. hot horseradish
2 Tbl. yellow mustard
1 Tbl. sugar
1/3 cup white vinegar
1/2 tsp. cayenne pepper
1/2 tsp. fine-ground black pepper
1 tsp. kosher salt
Sprinkle of paprika

Directions:
Dice into the same size pieces, approximately quarter of an inch. Add half the slaw dressing and toss together until slaw is lightly covered; you don’t want too much dressing. Keep in mind that as this slaw sits, the salt pulls the water from the vegetables and creates more liquid. Save some of the diced tomato to put on top of the slaw to garnish. You can also use a sprinkle of paprika.

Bonus: The slaw dressing also makes a delicious steak-dipping sauce.
