How can I freeze smaller servings of bacon?
I forced myself to figure out a bacon-freezing trick after nearly devouring half a package of cooked bacon. Because, of course, you defrost and cook the whole package, and it's just sitting around after breakfast while you're cleaning up, and eight zillion grams of fat later...
The trick? Tear a 5- to 6-inch long sheet of plastic wrap from the roll. Lay two or three slices of bacon across one end of the sheet. Wrap the bacon over and over in the plastic until you reach the other side of the sheet. Then, starting at one end of the wrapped bacon, roll the stacked strips into a tight spiral. Repeat with the remaining bacon. Place the spirals inside a freezer zip-top bag or container and seal. Stash in the freezer until your next insatiable bacon craving.
These little spirals defrost in no time, whether you're making Sunday breakfast for two or you need a few strips of bacon for soup (like this Crab and Corn Chowder with Bacon and Chanterelle Mushrooms -- yum!) or a spontaneous pasta carbonara. I promised myself I wouldn't steer anyone toward this ridiculously good Blue Cheese, Bacon, Apple, and Walnut Omelette, but this trick kinda screams for it. Sorry.
