Cooking Q&A: Boiling Eggs?

Q.

What’s the best method for boiling eggs?

A.

Perfect hard-boiled eggs start out in cold water. Cover the eggs with water in a saucepan that’s big enough to fit the eggs without too much crowding. Bring the water to a boil, then remove the pan from the heat and let the eggs sit for up to 15 minutes, depending on the type of yolk you like. If you want more of a coddled egg, with some drippy, yolky middle, let the eggs sit for five to eight minutes. For slightly harder yolks, let the eggs sit for 10 to 12 minutes.
