If a dish tastes too salty, can I desalt it?
Forget about the raw, sliced potato trick. Despite what countless cookbooks and kitchen gurus tell you, potato does not absorb the salt in a dish. Besides, what good is a potato in an over-salted vinaigrette or sauce? The simplest and most successful way to desalt a dish is to dilute it. If you’re making soup, add more water or stock (just make sure it’s low-salt broth). If you’re making a salad dressing, add more oil or vinegar. A pinch of sugar might balance the salt in a sauce or dish that’s blended and baked, like a casserole.
