Clarified butter is unsalted butter that is slowly heated until water in the butter evaporates and the milk solids separate and sink to the bottom of the pan. The butter is skimmed (to remove the foamy bubbles that surface) and poured off from the milk solids so that the only remaining liquid is the clear (or clarified) yellow fat. Without the milk solids, the butter has a higher smoke point and longer shelf life. It can be stored, unrefrigerated, for several months. Ghee is a type of clarified butter essential to Indian cuisine.
