Florida Rock Shrimp and Bacon Casserole
Freezing casseroles is easy. Before you make the casserole, line your dish with foil, making sure to fold the foil over the edges. After baking, let it cool and then pop it into the freezer. Once it’s frozen, slip out the casserole and foil, wrap it in freezer paper (or place it in a large Ziploc freezer bag) and return it to the freezer. When you’re ready to eat it, remove the casserole from the freezer paper and foil, thaw, and pop it in the oven in your original baking dish. It will keep for up to six months.
