What does it mean to "butterfly" a whole chicken? It simply means removing its backbone. It’s extremely easy to do and there are many benefits, but most important, you'll have more delicious chicken dishes.

Step 1 Position the chicken with the backbone facing up. Starting at the neck, use kitchen shears to cut through the ribs along one side of the backbone. Then cut down the other side of the backbone to remove it.
