Anybody else suffering from one serious holiday hangover? Well, we still need something easy and semi-light to whip up for the game tonight. It's game night and Minnesota is taking on Chicago.
Ingredients
1/2 cup flour
1 1/2 cups seasoned toasted
Breadcrumbs
4 eggs
1/2 cup milk
4 (1/4-inch-thick) slices
mozzarella cheese
8 slices day-old firm white bread
1 large vine-ripened tomato thinly sliced
1 bunch fresh basil, diced
Directions
1. Spread flour and breadcrumbs on separate plates. In a pie pan or other shallow pan, whisk together the eggs and milk.
2. Place 1 slice cheese on 4 bread slices. Spread tomato slices and a little basil on the remaining bread slices.
3. Press the slices together, with tomatoes, basil and cheese in the middle. Dip the outsides of the sandwich in the following order: flour, egg mixture and then breadcrumbs.
4. Place in small frying pan sprayed with nonstick cooking spray over medium heat.
5. Cover and cook about 2 minutes on each side, or until golden brown.
