We're prepping for football season around here. Where to begin? For starters, we'll head to the kitchen. And we're looking for recipes. Lots of them....'cause it's one long season. Quick. Easy. The cheesier, the better.
Meet Nest Dave and his wife, Figgy. Dave loves to cook. And he's really good at it too. (Yep, we can vouch for him.) So to kick-off our Monday recipe swap, he whipped up a batch of his favorite quesadillas. Yum!

Get Dave's Quesadilla Recipe
Makes 2 quesadillas
Ingredients:1 can black or pinto beans, drained and rinsed
1 medium tomato, seeded and diced
2 oz. pepper jack cheese, grated
2 scallions, rinsed and sliced
1 medium jalapeno, seeded and diced (optional)
Salt and pepper, to taste
2 fajita-size flour tortillas
Vegetable oil
Directions:
Step 1 Combine all of the ingredients in a bowl.
Step 2 Spread out the ingredients on each tortilla.
Step 3 Fold one side over, forming a half circle. Brush the top of the tortilla with vegetable oil and salt.
Step 4 In a cast iron or nonstick skillet over medium heat, brush pan with oil, and place both quesadillas in pan.
Step 5 Pressing down, flip quesadillas carefully when bottoms start to brown.
Step 6 When second side is also browned, remove, slice, and serve with salsa, sour cream, or any other favorite topping.
