Happy (almost!) Halloween, Nesties! We hope you're not like some of us (ahem -- me) and searching frantically-at-the-last-minute for the right party dip or appetizer to bring to your party tomorrow night...but just in case you are, we've got you covered. We're continuing our Nestie Recipe of the Day feature with this recipe for corn, tomato, and avocado salad from Nestie Mrs.DW_instead. We love the fresh, clean flavors of this dish, and like Mrs.DW_instead, we also love cilantro! This is a great dip or appetizer to bring to any tailgate or holiday party -- it's delicious and practically guilt-free! It's also a cinch to throw together...you know, just in case.

Corn, Tomato, and Avocado Salad
Makes: 4 servings

Ingredients
10 ounces frozen corn, thawed
1 pint cherry or grape tomatoes, halved
2 scallions, thinly sliced
1 avocado, diced
2 tablespoons lime juice
1 tablespoon good-quality olive oil
Kosher salt and coarse ground black pepper, to taste
Cilantro to taste

Directions
1. Combine corn, tomatoes, and scallions in large bowl. Whisk together lime juice, olive oil, salt, pepper, and cilantro and pour over vegetables. Chill for 1 to 4 hours.
2. When ready to serve, add gently fold in avocado and allow salad to come to room temperature. Season again with salt and pepper if needed.
