Instead of ordering pizza tonight, make your own (it's super easy, we promise). This recipe for pizza with spinach, garlic, and feta fromMcCormick 3-Step Cooking with Flavor is a quick, healthy option for DIY pizza. And considering it takes only 20 minutes to prep and cook, not only will you be saving money, you'll be saving time, too.
Makes: 4 servings
4 cups baby spinach leaves
1 tablespoon extra-virgin olive oil
3/4 teaspoons Italian Seasoning
1/4 teaspoon Lemon Pepper
1/8 teaspoon Garlic Powder
1 (12-inch) pizza crust
8 ounces Feta crumbles
1. Toss Spinach with olive oil. Sprinkle with Italian Seasoning, Lemon Pepper and Garlic Powder and toss. Pile spinach mixture on top of pizza crust. Sprinkle with Feta cheese.
2. Bake in preheated 450 degree oven 10 minutes or until spinach has wilted and cheese has melted. Remove from oven and drizzle with Balsamic Syrup (recipe follows), if desired.
Prep Time: 10 Minutes
Cook Time: 10 Minutes
• Pizza with spinach, garlic, and goat cheese
o Prepare as directed. Use 1 cup crumbled goat cheese in place of Feta cheese
• Pizza with mushrooms and Feta
o Use 4 cups sliced baby Bella mushrooms in place of spinach and 1 teaspoon Thyme Leaves for Italian Seasoning and Lemon Pepper. Heat oil in large nonstick skillet over medium-high heat. Add mushrooms and cook until wilted and most of the liquid has evaporated, 10 minutes. Stir in Thyme Leaves and Garlic Powder. Prepare as directed.
• Balsamic Syrup
o Bring 4 tablespoons balsamic vinegar to a boil. Cook until liquid becomes think and syrupy. Use sparingly-the flavor is intense.
