I know how it goes...you slave in a hot kitchen to put on a gorgeous spread, you wine and dine your guests until everyone falls into a turkey coma, and you even manage to scrub and dry every dirty dish in your sink before you manage to get to bed. And what are you left with for all your efforts? A ton of leftovers that you have no idea what to do with. Well, trust me when I tell you that this recipe will seem like a lifesaver when you're looking to use up your extra Thanksgiving fare while also creating a dish that seems like...well, not leftovers! This is a stir-fry that combines your extra turkey, cranberries, and even mashed potatoes!
Serves: 2
Time: 15 minutes
Ingredients
8-10 ounces ground turkey, small meatballs
1 cup celery, sliced
1 yellow bell pepper, sliced
1 tablespoon garlic, minced
1 tablespoon fresh grated ginger
1/2 cup chunky cranberry sauce
1 tablespoon low-sodium soy sauce
A little sea salt
Directions
1. Cut ingredients into desired sizes. Add a little oil or cooking spray of your choice to the pan. Heat pan to 400ºF/high heat. Add. Stir around for 2 minutes to brown on all sides.
2. Add celery, bell pepper, garlic, ginger, and cranberry sauce. Stir around for 2 minutes.
3. Add crushed red pepper and low-sodium soy sauce to taste. Stir around for an additional minute. Serve over mashed or pearl potatoes.
