This simple salad, made with baby greens, blue cheese, cranberries, and pecans, is elegant and delicious. It's the perfect addition to any holiday menu, but it's also a fabulous way to liven up your dinner table any night of the week!

Serves: 6

Ingredients
1 bag baby greens
1 small romaine heart, cut into bite-size pieces
1/2 cup pecans, toasted and coarsely chopped
1/2 cup dried cranberries
1/2 cup (about 4 ounces) crumbled blue cheese 
1/4 cup extra-virgin olive oil
Salt and freshly ground black pepper
1 tablespoon balsamic vinegar

Directions
1. Place all greens in a large bowl.
2. Add pecans, dried cranberries, and blue cheese.
3. Drizzle olive oil over salad, and sprinkle generously with salt and pepper; toss to coat. Taste for seasoning, and adjust if necessary.
4. Add balsamic vinegar and toss to coat again. Serve.
