I'm enjoying a roasted vegetable wrap from my local deli for lunch today, Nesties. This recipe, made with garlic mayo, is quite similar, although my wrap has pepper jack cheese and is made with a spinach tortilla. This mouth-watering treat is also healthy and didn't make a huge dent in my wallet -- what could be better?

Today I picked up a Nicoise Salad from my favorite lunch place down the street. I love the clean, crisp flavors of this salad, particularly how the simple flavors of the tomatoes, lettuce, and green beens balance the saltiness of the olives, artichokes, and tuna. Although my salad doesn't have fennel or bell pepper like this recipe, that's the beauty of salad -- you can really add or delete ingredients to suit your preferences.

I grabbed a pulled-pork sandwich from the deli down the street for my lunch today, and it's exactly what a pulled-pork sandwich should be: Tender and moist, slightly sweet, and definitely zesty. This recipe for Hot Pepper Pork Sandwiches is pretty similar, and it has the addition of finely diced jalapeno, green, or red pepper, which I think adds another awesome layer of flavor.

I love orzo and I love couscous, so when I first heard about fregole, I knew it would soon be a staple in my kitchen. A type of pasta that's somewhere between pearl couscous and orzo, fregole has a slightly nutty taste that pairs perfectly with the vegetables I have on-hand most frequently, like carrots, tomatoes, zucchini, and red peppers. This recipe is not only great when there are vegetables I need to use up before they go bad, but it also makes a lot and comes together quickly, so I can make it for dinner when I get home late and still have some left for my lunch the next day. In fact, I happen to be chowing down on some right now!

Last night, I made a stir fry with seasme ginger chicken. What's a girl to do with tons of leftovers? Bring them for lunch of course! This morning, I just threw some of the extra chicken onto some lettuce, packed it up, and I was ready to go!
