Yesterday, I was reading this article about what your beer of choice says about your personality (it was totally on-point -- I definitely am pretty great), which inspired me to pick up some beers on the way home. However, when it comes to drinking (and most other things, to be honest), my mind usually immediately wanders to food pairings, and so for dinner, I decided to pick a recipe I could add my extra beer to. Hence this awesome recipe for Stuffed-Chile Casserole With Red and Green Salsas, which is also my lunch today. I love that it's made in the slow-cooker, cause I can do other things while it's cooking, plus it makes a ton of extra food, which I can freeze later or eat for leftovers for the rest of the week!
