All these options sound reasonable for a quick, cheap get-away, but I think the biggest thing that makes it difficult isn't so much hotel pricing, but instead flights. Air fare is outrageous!

My girlfriends and I just took a trip to Vegas, and the Bellagio is an excellent option for a romantic or fun getaway. The water show is breathtaking. We flew over parts of the Grand Canyon - AWESOME sight. I recommend Las Vegas for all occassions. Enjoy!
